Sweet Cornbread
15 to 24 pieces
Ingredients
- 2 Cups All Purpose Flour
- 2 Cups Cornmeal
- 1 Cup Granulated Sugar
- 2 Tablespoons Baking Powder
- 1 ½ Teaspoon Salt
- 2 ½ Cups Buttermilk
- 1 Cup Vegetable Oil
- 5 Eggs
- 3 Tablespoons Butter, softened
Directions
Preheat oven to 400 degrees
In a large bowl, combine the flour, cornmeal, sugar, baking powder and salt, set aside . Mix well. Next, in another large bowl combine the buttermilk, vegetable oil and eggs. Beat until the wet ingredients until well combined. Next, pour the dry ingredients into the bowl with the wet ingredients and whisk together just until the mixture is well incorporated. Do not over mix. Butter a 9x11 or 9x13 baking dish. Pour the cornbread mixture into the buttered baking dish.
Bake for 30 to 35 minutes. Once done, additional butter can be spread over the top of the cornbread.
